Chocolate & Coconut clusters are very close to what I made a few weeks ago, the only difference is fewer steps and a more chewy treat! A couple weeks ago I posted a recipe for chocolate coconut cups. They were delicious! The coconut condensed milk and coconut mixture I made was actually enough for two batches of the little cups but I ran out of chocolate! The coconut mixture has been in the back of the fridge since then. I decided today instead of making little layers of chocolate and coconut I would just combine them. I’ve had chocolate nut clusters before but I don’t think I’ve had chocolate coconut ones. These turned out delicious and were much faster to prepare.
Half of a batch of coconut condensed milk with coconut shreds from here
1 cup semi sweet chocolate chips
1 cup milk chocolate chips
Mini cupcake liners
Melt the chocolate chips in 30 second increments until fully melted. Add the coconut mixture, stir to combine as well as possible, the coconut will make the chocolate firm up some. Place the mixture back in the microwave for 30-60 seconds stirring well in between so the mixture is easier to scoop. Scoop by teaspoonfuls into mini cupcake liners placed into a cupcake tin. This will make about 36 treats. Place in the freezer for 30 minutes to harden then remove and keep in the freezer in a ziploc bag or container. I wouldn’t store these in the refrigerator as they really need the freezer in order to keep their shape. Only take out what you are going to eat immediately or they will definitely melt on you!
