So I have been on a writing hiatus of sorts lately. I have not felt like writing or doing anything productive for months now. I have been doing creative things like crocheting several scarves, some tiny doilies, some large doilies, homeschooling the monster (which is always interesting), training my new puppy to do new things in the hopes she will one day be a service dog, so I have been busy, just not busy on the blog.
I have some plans in motion to change things up a bit on the blog so that I have a place to write about more things than just food and menu plans. I have been making menus every week for my family as usual during my time away from posting and might just do one big post with all the menus I’ve done the past month. This weeks menu was thrown together yesterday kind of willy nilly on a whim because I was tired of the same old thing we have been having lately. I browsed online for inspiration and wrote some things down then started thinking about what we have in the house and we actually have everything we need for the entire menu! Funny how that worked out because I did not write down what was in the pantry or freezer I just clicked on what might look good.
I was grocery shopping and had to pick up a few things at Target so while I was there I decided to look at their meat department. Did you know Target has sales on their meats? I found $1 and $2 off of their grassfed ground beef which made it $5.99 a pound which for this area is a great price. I bought 3! A few weeks ago I also found ground pork with $2 off coupons as well making them 99 cents a pound so I bought 4 which was all they had left. We still have some in the freezer. I know not everyone can do this but I try and save some of our weekly food budget for things that I find on sale especially meat as this stretches our food budget so much farther. The last thing I found on sale was organic chicken breasts. Those had $2 off stickers making them cheaper than the Never Any brand at Aldi. I have been cubing up our chicken lately and making it more of a side than a main dish and the kids haven’t complained! I usually serve it spiced with a side of rice and some type of vegetable so this makes it look like there is more meat. Now on to the menu!

Meal #3 Spiced Red Beans and Rice
Meal #4 Salmon Burgers and Roasted Potatoes
Meal #5 Breakfast Burritos
Meal #6 Sauteed Cabbage and Potatoes
I will be adding whatever frozen vegetables we have on hand to meals that don’t have them. I already have the recipe for the Creamy Potato Soup and will posting a link soon! Have a great week!
