I am still in search of treats I can have without eating corn or corn syrup. I have spent so many shopping trips reading ingredients on packages hoping that one of my favorite candies is corn free. Peanut butter cups have been one of my favorites for a long time but all the recipes again called for confectioners sugar along with a ton of steps in order to get the “Reese’s” type of treat. I love taking shortcuts and still coming up with a wonderful treat! These cups do not have the layers of chocolate and peanut butter but they certainly have all the flavor. I used corn free chocolate chips and natural peanut butter.
1 cup of semi-sweet chocolate chips
1 cup of milk chocolate chips
1/2 cup of natural peanut butter
Mini cupcake liners
First melt the chocolate chips in the microwave in 30 second increments until they are thoroughly melted. Stir the peanut butter into the melted chips really well so that everything is combined. Scoop by small spoonfuls into the cupcake liners that have been put into a mini muffin pan. Place in the freezer until they have firmed up. I keep them in the freezer because I like my peanut butter cups frozen, these would keep equally well in the refrigerator and would not be so hard.
