This week instead of coming up with dinner ideas on my own I enlisted my husband’s help! Maybe next week I will get ideas from the littles. Finding new ideas for dinner makes things more interesting.
This past week I made a castle cake for my little monster’s birthday. It had sprinkles. Let me tell you a secret about sprinkles. If you are using the little ones that look like balls they get everywhere! I sprinkled them on frosted ice cream cones for the turrets on the castle. I used a plate to hold over etc, you know all the proper precautions were taken. After getting the cake put together I started to clean the counters and found sprinkles, I swiped them to the floor, and I swept the floor. I go back and there are more sprinkles! Are they now multiplying? I swipe and sweep and sweep and swipe. They are rolling around like they are running from me! Have they multiplied again? Oh my, now they are not just in the kitchen. I have found them in the living room, on the couch, under the couch cushions, in my socks! Yes in my socks. Yes I had shoes on at the time. The little monster of course thinks this is funny and wants more sprinkles on his cake. I am still chasing sprinkles down 3 days later! The important part you ask…he loved his cake. If he wants sprinkles next year I will not buy the little itty bitty round ones that are still rolling around and getting in my socks!
Now on to this weeks menu. I am using up meat I bought in last week’s shopping so all I had to purchase this week were staples like milk and eggs as well as sides like vegetables and noodles. Items with Stars are ones I will post recipes to later in the week when we have them.
Meal #1 Minestrone Soup
This soup is super easy to make! One box of your favorite Vegetable Broth, 4 cups of water, 2 cans of tomatoes with juice, 3 diced red potatoes, a couple cups of mixed vegetables, a few teaspoons of your favorite spices. Simmer for several hours. I will post exact measurements later in the week so there is an actual recipe to follow.
Meal #2 Turkey Breast, Mashed Potatoes, Cranberry Sauce, Green Peas
Right now Aldi has Turkey breast available in the freezer section so I purchased one because I love white meat turkey. I will try it and if the littles like it I will purchase more each week while they are available. This is one item we enjoy all year long but can only find around the holidays. There are cooking directions on the package so I will follow those.
Meal #3 Ground Beef Stir Fry with Rice
Start out by cooking the ground beef all the way through breaking up as you stir and cook. Put your heat on medium-high and add your frozen stir fry vegetables. Add about 1/4 cup of water and saute the vegetables until they are almost cooked through. Add soy sauce or tamari sauce to taste, 1/4 teaspoon ginger and 1/2 teaspoon garlic, stirring to combine with the veggies and meat. Serve over cooked white or brown rice.
