Today the weather has been so much cooler that I have had the windows open all day! I love the way open windows makes it just feel like fall. If I had to pick a favorite season I think it would indeed be fall especially now living in an area where the leaves actually change colors. I have tried to take a picture of the beautiful foliage but it never quite captures the true beauty of the trees as the leaves change. One of the trees last year had leaves that looked almost pink! With the windows open everyone has been doing more, the little monster playing and the little princess walking around with her friends outside.
The little monster decided all his train tracks needed to be downstairs so the cleaning I had hoped to do has been put on hold. Besides playing with trains and dragons is way more fun than silly old cleaning anyway! As the weather cools off I am looking forward to warmer foods to have for dinner. I don’t mean cooked food, but spicier food and more comfort food. It’s nice to see our menu getting changed up a bit from the summer foods like salad and watermelon.
Meal #1 Salmon and Rice with Sauteed Broccoli
Meal #2 Cuban Black Beans and Rice
Meal #3 German Sausage and Roasted Potatoes This is a new take on an old recipe but it was super simple. I prepared the roasted potatoes as usual and then added some sliced German sausage to go with it. Cooked it all according to my roasted potatoes recipe here on the blog. It must have been good because there were no leftovers! The German sausage I found at our grocery store, Harris Teeter. It seems all the grocery stores are having more German food because of Oktoberfest type celebrations being planned.
Meal #4* Indian Spiced Chicken with Rice and Potatoes
Meal #5* Soup with Ground Pork, Mixed Veggies and Cajun Seasoning
Meal #6 Leftovers
The Meals with stars next to them will have their own blog posts later in the week as we have the meals. I actually do eat the things on the menu each week and take real pictures for you to see! There is always a Leftover night planned where all Leftovers from the week get put out on the counter and everyone takes what they want. This is a great way to sample the weeks dinners again and create new things from them as well. If we are in need of an extra meal for some reason breakfast for dinner is always our back up plan and it works out quite well.
