Wow what a week! What started out as normal quickly turned into a very busy week with lots of running around. Two littles had to stay out of school because of being sick, the husband pulled a muscle in his back, and now last night I twisted my knee! Holy cow, please tell me this next week will be boring…one can always hope right?
It’s funny when things start to get hectic the first item in our lives that takes a back burner is healthy cooking. Our little family did well for part of the week but failed towards the end of week succumbing to eating out. In order to try and prevent that this week I am trying something new; Buddha Bowls. Have you ever heard of Buddha bowls? I have but didn’t exactly know what they were.
Basically a buddha bowl is where you choose different foods from certain categories and put them all in a bowl together. So there are categories to choose from for each item, kind of like a buffet! You have a Base consisting of any type of greens. Veggies consisting of, you guessed it any type of veggies. Protein consisting of eggs, beef, quinoa, chicken, etc. Complex carbs like brown rice, sweet potatoes, etc. Sweet element like berries, apples, mangoes, etc. Crunchy element like sesame seeds and nuts, then a Topping like cilantro, hummus, avocado, tahini, even homemade salad dressing. Sounds like a lot but I narrowed it down considerably for this week.
Upon looking up way too many recipes on Pinterest I have picked two recipes I am going to try this week with some modifications of course. I will be using a quick rice I found at the store that has quinoa, brown rice, and black rice instead of plain quinoa. I may have roasted chicken breast for those that want it with the Sweet Potato Bowls as well. The rest of the menu is pretty basic but with one vegetarian option which is easier on the budget and will help with all the colds that have been traveling through my house lately! If the littles like the bowls I think there will be many more made in the coming weeks.

Meal #1 Beef roast, mashed potatoes, salad
Meal #2 Hamburgers for littles, hamburger and rice for me
Meal #3 Salmon, rice and salad
Meal #4 Fajita Bowl using this recipe and adding hamburger
Meal #5 Sweet Potato Bowl using this recipe, although I will be eating the bowls right away rather than refrigerating for later
